Why Food Sticks to Enameled Cast Iron
Because enamel is glass, not seasoning, and glass has nothing to release with. Once you stop expecting a non-stick pan, the fix is four habits — and every one of them is in the makers' own care instructions.
Almost everyone who asks this question has made the same assumption: that a pot which cost as much as a nice coat should not have chicken skin welded to it. The assumption is the problem. Enameled cast iron is iron with a layer of fused glass over it, and glass has no seasoning, no polymerized oil, no micro-texture holding a release layer — nothing to let go with.
That is not a defect; it is the trade you made. The reason enamel needs no seasoning and doesn’t mind an all-day tomato braise is the same reason it won’t release an egg. Lodge’s own care page for its enamel says it plainly: use low to medium heat and a generous amount of oil to prevent sticking. A maker does not write that about a non-stick surface.
The four causes, in the order they bite
1. The pan was too hot
This is the big one, and it is counter-intuitive because in bare cast iron the answer to sticking is often more heat. Not here. Enamel is not a conductive advantage over the iron beneath it; it is a hard shell on a heat-storing base, and if you run it hard the surface gets hotter than the fat can cope with. Fat that goes past its smoke point stops being a lubricant and starts being a varnish.
Every one of these makers says the same thing in different words. Lodge: low to medium heat. Le Creuset: heat gradually, use low to medium, never preheat on maximum. Zwilling for Staub: preheat on a low setting for around five minutes before you turn it up, and be careful with induction boost functions. If you brown meat in enamel the way you would in a bare skillet — ripping hot — it will stick and it will stain.
2. There wasn’t enough fat
“A generous amount of oil” is Lodge’s wording and it means film the whole base, not a teaspoon in the middle that beads and runs. Fat is what fills the space between food and surface; without it, protein contacts glass directly and bonds to it.
Staub’s instruction goes further and is about the pot rather than the food: always add a drop of cooking oil to prevent damage from overheating. Fat in an enameled pot is protective, not optional.
3. The food went in cold and wet
Cold food drops the surface temperature the moment it lands; wet food boils off its own moisture before it can brown. In between those two, the food sits in contact with the pan, bonding, doing nothing useful. Take meat out of the fridge for twenty minutes and pat it dry — the same discipline that gets a good sear in bare iron.
There is a second reason to care: Lodge warns against introducing cold ingredients into a hot empty pan, because that is a thermal-shock event for the coating. Dry food into a lightly oiled, moderately heated pot is the routine that is kind to both the crust and the enamel.
4. You moved it too soon
Protein releases when a crust forms, and not before. If a thigh feels welded after two minutes, that is not a sticking problem — it is an unfinished crust. Give it another minute or two and it will lift with almost no resistance. Prising it up early tears the crust off and leaves it on the pan, which then genuinely does burn on.
The routine that works
- Pot on a burner sized to its base. Low to medium, never maximum.
- Give it a few minutes to come up gently — Staub’s five minutes on low is a good number for any of these pots.
- Add enough oil or fat to film the entire base.
- Dry the food, salt it, and lay it in away from you.
- Leave it. Do not poke, press or check for two to three minutes.
- Lift a corner. If it resists, put it down and wait; if it releases, it is ready to turn.
- Deglaze while the pan is hot — the fond that is stuck on becomes the sauce, which is what a braising pot is for.
The one place a bit of sticking is the point
Fond — the browned residue on the bottom of the pot — is flavor. In a braise you want it, and the deglaze that lifts it into the liquid is half of why the finished dish tastes like anything. The distinction worth learning is between fond (brown, releases with liquid and a wooden spoon) and burnt-on (black, bitter, needs the baking-soda simmer in our cleaning guide). The first is cooking; the second is an overheating problem, and it takes you back to cause number one.
What about the black matte interiors?
Staub’s cocottes have a matte black interior rather than the light sand color Le Creuset and Lodge use. Zwilling describes it as taking on a natural non-stick character over time: fat works into the pores of the enamel layer and builds a smoother surface, and Zwilling recommends coating the inside with vegetable oil and warming it gently before first use.
That is real, and it is a genuine point in Staub’s favor if sticking annoys you. It is not seasoning in the bare-iron sense, it will not survive a scouring pad, and it does not exempt you from fat and moderate heat. It also costs you something: a dark interior makes it much harder to judge how brown your fond is, which is why we prefer light interiors for anything sauce-based. When enamel is simply the wrong pan
For eggs, pancakes, fish skin and anything else where release is the entire game, stop fighting the coating and use a seasoned bare pan. A well-used cast iron skillet has a genuine release layer — polymerized oil bonded into the surface — and it costs a fraction of an enameled pot. That is the division of labor we would recommend to anyone: enamel for acid, liquid and long braises, bare iron for searing and release. Frequently asked questions
Is enameled cast iron supposed to be non-stick?
No. Enamel is fused glass — it takes no seasoning and offers nothing for food to release from, which is exactly why it is safe with tomato and wine and needs no upkeep. Lodge's own guidance for its enamel is to use low to medium heat and a generous amount of oil to prevent sticking, which is a plain admission that the surface is not non-stick.
Why does chicken skin weld itself to my dutch oven?
Because protein bonds to a hot dry surface and then releases when a crust forms. If the pan was too hot, too dry, or the meat went in straight from the fridge, the bond wins first. Add enough fat to film the whole base, use medium rather than high heat, dry the meat, and leave it alone — it lifts when it is ready and not before.
Can I preheat an empty enameled dutch oven?
In the oven, yes — Lodge says preheating empty enamel in the oven is fine because the heat is distributed all round the vessel. On the stovetop, no: Lodge says not to heat empty enamel on a burner, Staub says to add a drop of oil to prevent damage from overheating, and Le Creuset warns against maximum-heat preheating. Dry, direct, one-sided heat is what damages the coating.
Does the black matte interior on a Staub work differently?
Somewhat. Zwilling says the matte black interior enamel takes on a natural non-stick film over time as cooking fat works into the pores of the enamel layer, and recommends coating the interior with vegetable oil and warming it gently before first use. It is not seasoning in the bare-iron sense, and it does not remove the need for fat and moderate heat.
How do I get burnt-on food off enameled cast iron?
Let the pot cool, then wash with warm soapy water and a sponge or scrub brush. For anything baked on, Lodge's method is a simmer of water with baking soda to lift it, rather than metal or abrasives.
