How we pick

The honest version: we don't run a test lab. Here is exactly what we do instead — and it's reproducible.

Almost every cast iron roundup online opens with some version of “we tested twenty skillets in our kitchen.” A lot of them didn’t, and none of them can prove it to you. We took the opposite approach: we tell you up front that we haven’t cooked in these pans, and we built a method that doesn’t need us to.

That first number is the point. Everyone in this category says they tested twenty pans; we haven’t tested any, and we say so — because the honest thing is more useful than the impressive-sounding thing. Here is what we do instead.

1. We compare the published specs

Cast iron is unusually easy to evaluate on paper, because the things that actually differ between pans are all published numbers. For every pan we recommend we pull, from the manufacturer’s own materials:

  • Weight — the single biggest real-world difference between two skillets of the same size.
  • Cooking surface and capacity — how much flat space or volume you actually get.
  • Surface finish — machined-smooth or raw cast.
  • Oven-safe temperature — unlimited for bare iron, capped for enamel (and sometimes for the knob).
  • Induction compatibility, warranty, and country of manufacture.

When a manufacturer doesn’t publish one of these, we print “Not published” rather than filling the gap with a guess. What a brand chooses not to state is information too.

2. We model the ten-year cost of ownership

A $25 Lodge and a $300 Le Creuset both last a lifetime, so comparing their sticker prices is misleading. The honest comparison is the price spread over the years and meals you’ll get out of the pan, plus a little for seasoning oil on bare iron. On that basis the inexpensive pans win by a distance — and where a premium pan is genuinely worth it (a lighter body for a bad wrist, tougher enamel, a specific feature), we say exactly why. 3. We cite every source

Every spec traces to a manufacturer page or listing, dated to the day we read it. Every claim about how seasoning or metallurgy works cites a real source — manufacturer care guides, America’s Test Kitchen’s and the American Chemical Society’s explanations of polymerization, university extension guidance on iron and food. You’ll find a Sources list at the bottom of every guide.

4. Prices are live, dated, and allowed to expire

We never type a price into an article. Every price you see comes from a daily automated check against the retailer and carries the date it was pulled. If that check ever stops running, the number disappears and the button falls back to “Check price on Amazon” — we would rather show you nothing than a stale figure.

What this method can’t do

Spec comparison won’t catch a bad casting, a lid that doesn’t seat well, or how a specific handle feels in your hand. Where hands-on testing genuinely matters, we say so and point to what a reputable testing outlet found rather than pretending we did the work. The trade we’re making is deliberate: complete honesty about our limits, in exchange for a method you can reproduce and check yourself.
