Cast Iron Dutch Baby
A pancake with no baking powder in it that climbs the sides of the skillet anyway. Steam does the work, and a preheated cast iron pan is what makes enough of it fast enough.
A Dutch baby contains no baking powder, no baking soda and no yeast. It rises anyway, dramatically, up the sides of the pan and over the rim. The engine is steam: King Arthur Baking’s explanation of popovers — the same physics in a different tin — puts it plainly, that steam is what makes them rise, and that gluten in the flour plus protein from the eggs builds the structure that traps it.
Which tells you exactly what the recipe needs. Enough water in the batter to turn into steam, enough egg and flour to hold it, and enough heat arriving fast enough to flash that water into vapor before the structure sets. Cast iron is unusually good at the last part, because a preheated skillet is a store of energy that dumps into the batter the instant it lands.
King Arthur bakes theirs at 425°F for 20 to 25 minutes, with the butter browned in the pan first and a longer bake giving a drier, more golden pancake. That is the frame this recipe follows, scaled to a household-sized 10 to 12-inch skillet.

Preheat the oven with the skillet in it
Put a 10 to 12-inch cast iron skillet on the middle rack and heat the oven to 425°F. Leave the pan in for at least 10 minutes after the oven says it is up to temperature - the oven reaches 425°F long before the iron in it does, and the pan's stored heat is what makes this work.

Blend the batter
Whisk the eggs hard for 30 seconds until pale and frothy, then whisk in the milk, sugar, salt and vanilla, and finally the flour. Whisk only until smooth. A blender is easier and gives a smoother batter - King Arthur suggests exactly that if yours is lumpy.

Let the batter rest
Leave it for 10 to 20 minutes while the pan heats. Resting lets the flour hydrate and takes the chill off, and a cold batter hitting a hot pan is one of the three things that stop a Dutch baby rising properly.

Brown the butter in the hot pan
Pull the skillet out with a dry cloth or mitt - it is 425°F and the handle gives no warning. Drop in the butter and swirl; it will foam and go nutty within about 30 seconds. Tilt the pan so the butter climbs the sides as well as covering the base.

Pour and return, fast
Pour the batter straight into the center of the buttered pan and get it back into the oven immediately. Do not stir it in the pan and do not spread it. Every second the pan spends out of the oven is heat the batter will not get.

Bake without opening the door
Bake for 20 to 25 minutes. The edges climb the pan and go deep brown while the center stays lower and custardy. Do not open the oven for the first 15 minutes - the temperature drop is enough to stall the rise. A longer bake gives a drier, more golden pancake; a shorter one leaves the middle softer.

Serve immediately, and expect it to sink
It will deflate within a minute or two of leaving the oven. That is not a fault - the steam holding it up is condensing. Dust with icing sugar, squeeze over lemon, or pile fruit into the well in the middle, and take it to the table in the pan.
The three things that stop it rising. A pan that was not properly preheated; cold batter or cold eggs; and opening the oven early. Every flat Dutch baby we have heard about comes down to one of those. Nothing about the recipe needs a leavening agent added.
Savory version. Leave out the sugar and vanilla, add black pepper and a handful of grated hard cheese to the batter, and serve it with greens and a fried egg or crisp bacon. The structure is identical; only the seasoning changes.
Pan size changes the shape.A 10-inch skillet gives a thicker, taller pancake; a 12-inch gives a thinner, crisper one with more browned edge. Both are correct. If you own neither, a shallow oven-safe pan will do it — cast iron simply does it best, for the same heat-retention reason set out in what is cast iron.
Afterwards.Egg and milk batter sets hard if left. Fill the warm pan with hot water for a couple of minutes, scrub with a nylon brush, dry it fully on the burner and wipe on a thin film of oil — the routine in our cleaning guide.

Why didn't my Dutch baby puff up?
Almost always one of three things: the skillet was not preheated long enough, the batter or eggs were straight from the fridge, or the oven door was opened during the bake. There is no leavening agent to fail — the rise comes from steam, so anything that slows the heat reaching the batter flattens it.
