Cast Iron vs Nonstick: Which Pan Do You Need?
One sears, holds heat and outlives you. The other releases an egg and is a consumable. They are not really competitors — but if you can only buy one, there is a right answer.

These two pans get compared constantly and they are not really the same kind of object. One is a piece of metal that will outlive its owner and does its best work at temperatures that would destroy the other. The other is a coated tool with a service life, bought to do one job easily.
The useful comparison is not “which is better” but which job you are buying a pan for, and whether you are buying an object or a consumable.

Where cast iron wins outright
Heat, and what heat does
Cast iron’s advantage is stored heat. A heavy pan holds so much energy that a cold steak barely dents the surface temperature, so the meat browns rather than steaming. A coated pan cannot be run at the temperature a hard sear wants, and would not hold the heat if it could.
That is why every steak method — including ours— is written around a heavy pan.
The oven
Bare cast iron has no upper temperature limit. It goes under a broiler, into a 500°F oven, onto a fire. Non-stick coatings are capped by the manufacturer and are not broiler tools. Anything that starts on the hob and finishes in the oven — a whole chicken, a frittata, cornbread — is cast iron territory by default.
Lifespan, which is the real argument
This is the column that should decide it for most people. A non-stick pan is a consumable. The coating degrades with heat cycles, utensil contact and cleaning, and after a few years it sticks and there is nothing to be done. You replace it.
Cast iron does not have a service life. Seasoning wears; you rebuild it. It rusts; you scrub it back. People cook daily on pans made a century ago. Over twenty years the cast iron pan is not merely cheaper — it is a different category of purchase, which is the arithmetic we set out in the buying guide.
Where nonstick genuinely wins
We are not going to pretend otherwise, because the pretending is how people end up frustrated with cast iron.
Eggs. A coated pan releases a bare fried egg with no fat and no technique. A cast iron pan will do it too — once the seasoning is mature, with butter, and with proper preheating. That is a real difference on a Tuesday morning.
Delicate fish. Thin white fillets stick to almost anything. Coated pans are markedly more forgiving.
Low-fat cooking. If you are cooking with minimal oil for dietary reasons, a coated pan is simply the better tool. Cast iron’s release depends on some fat being present.
Weight. A light pan you can lift with a bad wrist beats a good pan you leave in the cupboard. This is not a small consideration, and if it is yours, Lodge’s lightest line is worth a look before you write cast iron off entirely.
The safety question, answered properly
A lot of people arrive at this comparison because of coatings rather than cooking, so it is worth being precise rather than either alarmist or dismissive.
Germany’s Federal Institute for Risk Assessment — a national risk-assessment body, not a cookware brand — states that no adverse health effects are to be expected from PTFE-coated cookware used properly. It also identifies the specific risk case: overheating, particularly an empty pan. When there is food in the pan, water content holds the surface near the boiling point of water, which keeps the coating well within its comfortable range. A dry pan on a high burner has nothing holding it back.
The practical guidance that follows is short: do not preheat a coated pan empty on high, ventilate when cooking hot, and replace pans whose coating is damaged or flaking.
If you would rather avoid polymer coatings altogether, the honest alternatives are bare cast iron, carbon steel, stainless, and enameled cast iron — and it is worth knowing that enamel is fused glass, not a coating in the non-stick sense at all. People conflate the two constantly.
If you can only buy one
Buy the cast iron. It does more jobs, it does the difficult ones better, it goes in the oven, and it does not expire. The things it is worse at — eggs, delicate fish — get easier as the seasoning matures, and they are a smaller share of most people’s cooking than they feel like when you are choosing.

The realistic answer: own both
Most kitchens that cook properly end up with a cast iron skillet, a nonstick pan and something stainless, because they are three different tools. The sensible split is:
- Cast iron for searing, roasting, cornbread and anything oven-finished.
- Nonstick, cheap and replaced when it dies, for eggs and delicate fish.

Buy the cast iron first, because it is the one that will still be there in thirty years.
Frequently asked questions
Is cast iron better than nonstick?
For searing, roasting, oven work and anything that needs high heat, yes, decisively. For eggs, delicate fish and pancakes on a weeknight, a nonstick pan is easier and there is no shame in it. The real difference is lifespan: cast iron is a permanent object and nonstick is a consumable that wears out in a few years however carefully you treat it.
Is cast iron nonstick?
A well-seasoned pan releases food well, but it is not non-stick in the coated sense. Seasoning is polymerized oil built up over time, it works best with some fat in the pan, and it takes months of regular cooking to reach its best. A brand-new cast iron pan is not going to slide a bare egg around the way a coated pan does.
Is nonstick cookware safe?
In normal use, national risk-assessment guidance says no adverse health effects are expected from PTFE-coated cookware. The risk that does exist is overheating an empty pan — food in the pan keeps the surface near boiling point, so the danger case is a coated pan preheated dry on high. Damaged and flaking pans should be replaced, and good ventilation is sensible at high heat.
Can you use metal utensils on either?
On cast iron, yes — metal spatulas are fine and a stiff one actually helps keep the surface flat. On nonstick, no: metal is the fastest way to damage a coating, and once it is scratched the release starts going and the pan is on a countdown. Wood or silicone on coated pans, always.
Which pan is better for eggs?
Nonstick, honestly, especially early on. A mature cast iron pan will fry an egg beautifully with a knob of butter and proper preheating, but it is a skill and a well-built seasoning layer, where a coated pan just does it. If eggs every morning are the reason you are shopping, buy the nonstick and buy cast iron for everything else.
How long does a nonstick pan last?
A few years of regular use, at best. The coating degrades with heat cycles, utensil contact and abrasive cleaning regardless of how careful you are, and once it starts sticking there is no restoring it. That is the fundamental difference from cast iron, which can be stripped and re-seasoned back to new indefinitely.
