Is Cast Iron Cookware Safe?
Yes, with two genuine caveats and a lot of noise around them. Here is what public health sources, a food scientist and the chemistry actually say about iron, seasoning, rust and old pans.
Most cookware safety questions are really questions about coatings: what is on the surface, what happens when it gets hot, what comes off into the food. Cast iron is unusual because the answer is short. The pan is iron. What is on it is oil that has been cooked until it hardened.
That does not make every claim about it true, in either direction. Here is what the actual sources say, starting with the one real property that makes cast iron different from every other pan in your kitchen.
1. Cast iron puts iron in your food
This is the genuine, documented effect, and it cuts both ways depending on who you are.
University of Illinois Extension guidance describes how cast iron leaches dietary iron into food, and notes that acidic and moist foods absorb the most — a tomato sauce simmered for an hour picks up considerably more than a steak seared for four minutes. The NIH’s MedlinePlus encyclopedia puts the scale of it plainly: cooking in cast iron pots may increase the amount of iron in the diet, and most of the time this is a very small source. And a peer-reviewed trial indexed on PubMed found a beneficial effect of iron-pot cooking on iron status.
For most people that is an upside, or at worst neutral. Iron deficiency is common; a pan that contributes a little is not a hazard.
For a small group it is a reason to ask a doctor.If you have a condition that requires limiting dietary iron — haemochromatosis is the usual example — that is a medical question and not one a cookware site should answer for you. Raise it with your clinician; the honest answer is that it depends on your situation, not on the pan.
2. Seasoning is not a chemical coating
The word “coating” does a lot of damage here, partly because some listings misuse it — we have seen a Lodge pan advertised with a “true non-stick coating,” which is simply wrong about its own product.
Seasoning is oil heated past its smoke point until it polymerizes into a hard layer bonded to the iron surface. That is the American Chemical Society’s own description of the chemistry. There is no fluoropolymer, no manufactured film, and nothing that decomposes into something novel at high heat: the worst case for overheated seasoning is that it breaks down and you have to re-season the pan.

3. Rust is a maintenance problem, not a poison
A rusty pan looks alarming and is mostly an inconvenience. Iron oxide in the small quantities involved is not a toxicological event; what it does is tell you the seasoning has failed in that spot, which means food will stick there and may pick up a metallic taste.

4. The soap myth, buried again
Washing-up liquid does not destroy seasoning. Modern detergents are not the lye-based soaps that gave rise to the rule, and a properly polymerized layer is chemically bonded to the iron rather than sitting on it as grease. 5. Acidic food: real, and smaller than the internet thinks
Long acidic cooking — tomato sauce, wine reductions, anything vinegary simmering for an hour — strips seasoning faster and transfers more iron, which can leave a metallic taste and a dulled pan. That is a cooking-quality issue, not a safety one, and it is entirely avoidable: use enamel for the long acidic jobs and bare iron for everything else.

6. Where the real caution belongs: coated and imported ware
If there is a genuine cookware safety story, it is not about bare iron. The FDA has issued and updated warnings about imported cookware that may leach lead, and it publishes guidance on lead in food and foodware generally. That risk lives with coated, glazed, decorated and unbranded imported pieces — not with a bare seasoned skillet, which has no glaze to leach from.

The short answer
Cast iron is one of the least complicated pans you can own from a safety point of view: iron, plus oil that has been cooked hard. It adds a little dietary iron, which is a benefit for most people and a conversation with a doctor for a few. Rust is cosmetic. Soap is fine. The things worth being careful about — lead in imported glazed ware, coatings that degrade — belong to other categories of cookware entirely.
