The Best Oil to Season Cast Iron
Smoke points, flaxseed's flaking problem, and the reason the oil already in your cupboard is almost certainly fine. What actually decides how a seasoning layer turns out.
More words have been written about seasoning oil than the subject deserves. There are people who will tell you flaxseed is the only correct answer, people who swear by grapeseed, people who insist on lard because that’s what their grandmother used. Most of them are describing a pan that worked, not an experiment that isolated the oil.
The honest position is this: how you apply the oil matters far more than which oil you apply. A thin coat of cheap vegetable oil baked past its smoke point produces a better surface than a thick coat of expensive grapeseed baked at too low a temperature. That said, the choice isn’t arbitrary either, and one popular recommendation has a genuine flaw worth knowing about.
The one thing that actually matters: smoke point
Seasoning is not oil sitting on iron. It is oil that has been chemically transformed. Heat a fat past its smoke point and it starts breaking down; its molecules cross-link with each other and bond to the metal, forming a hard, plastic-like network. That’s polymerization, and it’s the same process the American Chemical Society and America’s Test Kitchen both describe when they explain why a seasoned pan behaves the way it does.
The practical consequence flips most people’s intuition. You do not want an oil whose smoke point is above your oven temperature — you want one it will pass. If you bake at 450°F with an oil that smokes at 500°F, nothing polymerizes properly and you get a soft, tacky varnish that wipes off.
The University of Illinois Extension puts most cooking oils in a band between roughly 350°F and 450°F, with lighter-colored refined oils sitting higher. Since seasoning is usually done somewhere in the 450–500°F range — Lodge’s own re-seasoning guidance uses that range, and Smithey publishes 475°F with grapeseed — almost every neutral cooking oil in an ordinary kitchen falls comfortably below the oven temperature. Which is precisely why almost all of them work.
What to use
The reliable everyday choices
Grapeseed oil. High smoke point, very neutral, thin enough to spread in a genuinely fine film. It’s what Smithey specifies in its own published seasoning instructions — and what it pre-seasons its pans with at the factory — and it’s the choice we’d default to if the price doesn’t bother you.
Canola or ordinary vegetable oil. Cheap, neutral, refined, high smoke point. There is no meaningful performance gap between these and grapeseed in a home oven, and the fact that it costs almost nothing per seasoning round is a real advantage when you’re doing five of them on a restoration.
Refined sunflower, safflower or peanut oil. All fine, all in the same band. The Illinois Extension groups peanut, corn, refined canola, rice and sunflower together as the high-heat options, which is exactly the group you want.
Shortening. Solid at room temperature, so it’s harder to apply too thin — but it’s what a lot of foundries historically used and it produces a good layer. Melt it, then wipe hard.
The special case: flaxseed
Flaxseed oil deserves its own paragraph because it is simultaneously the most recommended and the most complained-about seasoning oil on the internet.
It works, spectacularly, at first. Flaxseed is a drying oil — the same chemistry as linseed oil in paint — so it polymerizes far more aggressively than a cooking oil does. Six thin coats of flaxseed produce a hard, glossy, almost enamel-looking black surface that people photograph and post.
The problem shows up months later: it flakes. That same aggressive cross-linking makes a brittle layer with relatively poor adhesion to the iron, and once a corner lifts, sheets of it come away. It is also unforgiving of the slightest excess — a coat a fraction too thick will craze. Some people run flaxseed pans for years with no issue; plenty of others have had to strip and start again.
Our position: it isn’t worth the risk for a first seasoning. If you want to try it, apply it absurdly thin and accept that a strip-and-restore may be in your future.
What to avoid
Extra virgin olive oil. Low smoke point, and it tends to leave a sticky finish at seasoning temperatures. It’s a fine cooking oil and a poor seasoning oil.
Butter. Milk solids burn well below any useful seasoning temperature, leaving speckled residue rather than a layer.
Animal fats, for oven rounds. Lard and bacon grease built generations of pans and still work perfectly as cooking fats that maintain seasoning. For deliberate oven seasoning they’re second-best: they carry proteins and water, which can leave residue, and unused fat left on a stored pan can go rancid.
The mistakes that actually ruin a seasoning layer
None of these is about which oil you chose.
Too much oil. This is the single biggest cause of a bad result. Excess oil pools, and pooled oil bakes into a gummy, tacky film instead of a hard one. Rub the oil over the whole pan, then wipe it back off with a clean cloth until the pan looks dry. It will feel like you removed all of it. You didn’t.
Not hot enough. As above: below the smoke point, no polymerization. If your seasoning never seems to harden, the oven temperature is the first thing to check — and oven thermostats are frequently off by 30–50°F.
Too few coats, too thick. Six thin layers are stronger than two thick ones, and it is not a close contest. Thin layers bond to each other; thick ones trap uncured oil underneath.
Skipping the sides, back and handle. Bare iron anywhere is a rust site. Season the whole pan.
The oil you cook with does most of the work anyway
Here’s the part that puts the whole debate in proportion. Oven seasoning gives you a foundation of three to six thin layers. Everything after that comes from cooking— every time you fry bacon, sear a steak or roast vegetables in fat, a little more oil polymerizes onto the surface, and every pass of a spatula polishes it mechanically.
A pan cooked in weekly for a year has hundreds of micro-layers built from whatever fat happened to be in it, and that accumulated surface dwarfs the contribution of the specific oil you chose for round three of an oven seasoning eighteen months ago. Which is the real reason we tell people not to agonize: pick a neutral, refined, high-smoke-point oil from the cupboard, apply it in an almost invisible film, get the oven properly hot, and then go cook something fatty in the pan.

What is the best oil to season cast iron?
Any neutral oil with a smoke point comfortably above your oven temperature. Grapeseed, canola, refined sunflower, refined peanut and ordinary vegetable oil all work well and all cost little. Smithey uses grapeseed at 475°F in its own published method. The oil matters far less than applying it thinly and getting the pan hot enough.
Why does smoke point matter for seasoning?
Because seasoning only forms when the oil passes its smoke point. Above that temperature the oil breaks down and its molecules cross-link into a hard, polymerized layer bonded to the iron. Below it, the oil just sits there and bakes into a soft varnish. So the oil's smoke point needs to be below the temperature you're baking at, not above it.
Is flaxseed oil good for seasoning cast iron?
It builds the hardest, glossiest layer of any oil, and it has a well-known habit of flaking off in sheets months later. Flaxseed polymerizes very aggressively, which creates a brittle layer with poor adhesion when applied in more than the thinnest coat. It works beautifully until it doesn't. Most people are better served by grapeseed or canola.
Can you season cast iron with olive oil?
You can, but it's a poor choice. Extra virgin olive oil has a low smoke point — the Illinois Extension puts most cooking oils between roughly 350°F and 450°F, and EVOO sits at the bottom of that range — so at normal seasoning temperatures it burns rather than polymerizing cleanly, and it tends to leave a sticky finish. Refined light olive oil is better but still not the sensible pick.
Can you use bacon grease or butter to season cast iron?
Bacon grease works for maintenance seasoning through cooking, and it's how generations of pans were built. It's not ideal for a deliberate oven seasoning: animal fats contain proteins and water that can go rancid or leave residue. Butter is worse — milk solids burn at low temperature. Use a neutral refined oil for oven rounds and let bacon do its work in the pan.
